Perhaps it's just the way I've got this program set up --

-- whenever I've finished listening to a podcast, it gets deleted, and an even older one is downloaded in its place. Is there some combination of settings that will stop this from happening?

Have you tried to go into "Podcast Setting" while inside the specific podcast, and to set "Delete after listening" to No?
Also, below that has the setting for "Download More After Delete."
